Cheesy smashed potatoes with lemon-thyme-dip

Ingredients:

  • 400g potatoes (raw or cooked)
  • 2 tbsp olive oil
  • pack Gratinello
  • 1 tsp paprika powder
  • Salt / pepper
  • thyme
  • 1 red onion
  • For the dip:
  • 100g vegan mayonnaise
  • 100g vegan yogurt (Skyr type)
  • 1 tsp thyme
  • zest of one organic lemon
  • 1 splash of lemon juice
  • Salt / pepper
  • ½ tsp agave syrup
  • 1 clove garlic, grated/pressed

Comforting and flavorful: These baked mashed potatoes with Gratinello and a lemon-thyme dip are ready in 60 minutes, offering a delicious blend of crispy potatoes and an aromatic vegan cheese alternative. An ideal dish for a cozy dinner or as a special side.

Instructions:

Wash the potatoes and cook them unpeeled in a pot with salted water for about 15 minutes (Alternatively, you can use leftover boiled potatoes).

Preheat the oven to 220 degrees Celsius with both top and bottom heat, and line a baking sheet with baking paper.

Place the unpeeled potatoes on the baking sheet and mash them with a potato masher (or alternatively, the bottom of a bottle).

Drizzle the mashed potatoes with olive oil. Season with salt, pepper, paprika powder, and thyme.

Peel the red onion and cut it into small cubes.

Evenly distribute onion cubes and Gratinello over the mashed potatoes.

Place the baking sheet in the oven and bake for 20-25 minutes.
