Cheesy Broccoli-Nuggets

Ingredients:
- 300g broccoli
- 1 tsp canola oil
- 1 onion, finely diced
- 2 cloves of garlic, chopped
- ½ bunch parsley, chopped
- 80g Mondarella Fresh Cream Nature / alternatively, Mondarella Classic
- 2 tbsp nutritional yeast flakes
- 2 tsp psyllium husk
Instructions:
Divide the broccoli into florets and place them in a steamer (or a pot with a steaming basket). Steam until the broccoli is tender but still crisp (approximately 8-10 minutes).
Then, rinse and pat dry with a paper towel.
Meanwhile, heat the canola oil in a pan and fry the onion for 2-3 minutes. Add the garlic and fry for another minute.
Place the steamed broccoli together with the fried onion-garlic mixture and parsley in a food processor. Coarsely chop, avoiding a creamy consistency.
Transfer the mixture to a large bowl. Add Mondarella Fresh Cream Natural / Mondarella Classic, psyllium husk, spelt flour, nutritional yeast flakes, salt, and pepper. Mix everything together and fold in the Gratinello.
Shape the mixture into approximately 18 nuggets, each weighing 30g, in any desired form. Meanwhile, preheat the oven to 180°C (convection) or 200°C (top/bottom heat).
Place the nuggets on a baking sheet lined with baking paper, brush with a little oil, and bake for about 15-20 minutes until golden brown.
