Vegan mac'n'cheese with Gratinello

Servings:
for approx. 6 people

Ingredients:

  • 400g uncooked noodles
  • 250g Gratinello

For the sauce:

  • 250g potatoes
  • 1-2 carrots
  • 1 onion
  • 2-3 garlic cloves
  • 175ml vegetable broth
  • 80g Pastasan
  • 1 splash of lemon juice
  • 1 tbsp mustard
  • 1 tsp paprika powder

For toppings:

  • fresh parsley
  • Pastasan

American comfort food, reimagined in a plant-based version. A creamy, savory dish for the whole family, perfect as a side or the main attraction. Quick, easy, and incredibly delicious!

 

Instructions:

Peel and roughly chop potatoes, carrots, and onion. Add some water and cook until the vegetables are soft enough to blend (about 10 minutes).

Meanwhile, cook the pasta according to the instructions.

Smash the softened vegetables with 175ml of the reserved cooking water. Blend together with the remaining ingredients in a blender until creamy.

Pour the sauce over the cooked pasta.

Mix everything together and fold in 200g of Gratinello. Transfer the mixture to a casserole dish. Sprinkle with Pastasan and the remaining Gratinello. Bake at 180 degrees for 15 minutes.
