Baked Soft Blanc on a fruity carpaccio

Ingredients:
- 2 Soft Blancs
- 6 plums
- 1 tsp olive oil
- lingonberries
- bunch of parsley
- 100g flour
- 100g starch (cornstarch)
- 250 ml cold mineral water
- Salt / pepper
A culinary delight, yet incredibly uncomplicated to prepare: creamy Soft Blanc meets fresh plumes. Add a touch of olive oil, fruity lingonberries, and there you have it – a visually stunning and delicious dish.
Instructions:
Prepare tempura batter: Mix starch, flour, and water.
Wash parsley, finely chop it, and add it to the batter.
Wash plumes and slice them thinly.
Arrange the slices on the plate and season with olive oil, salt, and pepper.
Cut Soft Blanc / Rouge into 6 equal parts and dip them into the tempura batter. Afterwards, deep-fry them in hot oil (vegetable oil).
Arrange directly on the carpaccio and garnish with lingonberries.
