Green Basil-Almond Pesto with Pastasan

Recipe: Green Basil-Almond Pesto with Pastasan

Ingredients:

  • 1 bunch basil
  • 15 g mint
  • 1-2 garlic cloves
  • 125ml olive oil
  • 100g Mondarella Pastasan
  • sea salt by taste

Fresh and aromatic: this green almond pesto is prepared in just 15 minutes and adds a wonderfully flavorful touch to any dish. Perfect as a quick side dish or to give everyday meals a special taste.

Instructions:

Pluck all the basil and mint leaves from the bunch.

Put all ingredients except for the Pastasan into a tall container. Then blend finely with a hand blender. If you prefer a slightly chunkier texture, do not blend the mixture for too long.

Next, add the Pastasan.

Alternatively, the pesto can be prepared using a pestle and mortar.

First, crush the leaves and garlic. Then add olive oil and Pastasan and mix together.

Season the pesto with salt and transfer it into a clean, sealable container.

Tip: Cover the surface of the pesto completely with olive oil and store it in the fridge for up to 2 weeks.
